What am I going to do with THAT?

I was at the farmers market on Saturday with my friend and her daughter and I found a gorgeous bunch of chard for $3. Chard is one of the worlds healthiest foods and (I think) one of the most versatile leafy greens to incorporate into any diet. It's also one of those vegetables that people receive in their home delivery produce boxes this time of year and ask, "What in the heck am I going to do with THAT?"

Chard is a little bit pungent, chewy, and very dense. Most people, myself included, prefer to wilt it as it's too bitter and tough to add to a salad. Chard can be used in place of spinach in veggie lasagna, it can be sauteed and tossed with pine nuts and a little balsamic vinegar for a delicious bed of greens to place salmon, tofu, or roasted vegetables on. Chard can also be sauteed and tossed with a little pasta and parmeasan cheese for a one bowl meal.
